Sometimes we baulk at trying recipes we think the family might not like. But I can say from experience, you can be seriously surprised by what even fussy eaters will try. The udon noodle recipe is one such dish – and super simple to prepare. Look for the noodles in the Asian section of your supermarket. This week we are doubling the chilli con carne and the mango chicken. Start to incorporate the food banked meals from your freezer into your weekly meal plan to reduce your cooking load to only 4 meals a week plus some sides.
MEAL PLAN #17: SUMMER
Monday – Chilli con carne served with steamed rice. Recipe on the app. Double the chilli recipe and freeze half.
Tuesday – Udon noodles. Recipe on the app.
Wednesday – Herb crusted fish with vegetables or salad. Recipe on the app and the blog.
Thursday – Stir fry mince with XO sauce. Recipe on the app and the blog.
Friday – Leftovers or something from the freezer from your food banked meals
Saturday – Mango chicken and couscous salad. Recipe on the app and the blog. Double the meat marinade and freeze half.
Sunday – Super-simple meal night. Pull a meal from the freezer or make eggs on toast, or baked potatoes with your favourite toppings.
